Make a big tray or 3 of granola.
Preheat oven to 250F.

3c oats
½ c almonds
½ c sunflower seeds or pepitas
½ c chia seeds
Optional ½ c millet seeds (they get really crispy!)

Stir in:
1 tsp cinnamon
1 tsp salt

Then mix well with:
½ c oil (coconut or olive)
1/3 c maple syrup
1 tbs vanilla essence

Spread out evenly on a silver baking tray. Put in oven. 2 options here: Leave it for 30 mins and then take it out break it up, if you like it more chunky. Or, mix it every 10 mins if you like it more separated.

Cook for about 60 mins total – until brown and toasted looking.
Stir in ½ c of toasted coconut and or dried fruit as it’s cooling.

Put in a big mason jar and eat with fruits and nut milks all week!
