Prep Lunch for the Week – Option 1 – Flourless Quiche

Preheat oven to 350F.

20 oz frozen spinach

6 eggs

1 lb grated cheddar

1 tub of cottage cheese

Defrost spinach and drain out the liquid. Mix with eggs, grated cheddar & cottage cheese, salt and pepper. Pour into a 12×8 or so pyrex dish. Bake until solid – about 45 mins.

Cut into squares and eat with salad, with steamed veggies, in your car on the way to work…!
